Street Taco Nachos
Made with Veggimeal
Yields: 5-8 servings
Prep time: 10 minutes
Cook time: 10 minutes
- 1 package Veggimeal (Street Taco)
- 1 bag tortilla chips
- 2 cups shredded cheese
- 1 tomato, chopped
- 1 can sliced black olives
- 1 green onion, chopped
- 1 jalapeno, chopped
- Preheat oven to 350°F.
- Prepare Veggimeal Street Taco mix as per package instructions.
- Spread tortilla chips on lined baking sheet. Sprinkle with 1 cup shredded cheese and Veggimeal, then additional toppings. Add remaining 1 cup of cheese.
- Bake for 10 minutes or until cheese is melted. Enjoy with salsa, sour cream, guacamole, whatever you’d like!

Thai Lettuce Wraps
Made with Veggimeal
Yields: 20 wraps
Prep time: 10 minutes
Cook time: 15 minutes
- 1 package Veggimeal (Thai Yellow Curry)
- 1 head romaine lettuce (hearts)
- 1 cup carrots, grated
- 5 tbsp canola oil
- 1/2 cup green onion, chopped
- In a medium sauce pan, cook grated carrots for 5-10 minutes on medium-high heat.
- In another bowl, add 2 cups of water to 1 package of Veggimeal Thai Yellow Curry with 3 tbsp of canola oil.
- Heat Veggimeal mixture on medium high for 5 minutes.
- Add shredded carrots and green onion.
- Cook until reduced.
- Scoop into romaine leaves and top with chili flakes. Enjoy!
